10,000 or more words? Sounds like a good start.
So I have been haunting some of the Big Bang sites and going through their archives or tag lists. These are some of my favourites; stories that I have remembered even after reading billions and billions and billions more words. (I’m only slightly exaggerating.)

“Dean can't stop wondering why people would write gay porn about him and Sam. Research takes him to interesting places; re-reading novels for subtext, visiting message boards, and a really freaky place called LiveJournal.”
Meta, humour and porn: what else do you need? Well, she throws in great characterizations, a fun plot, and enough knowledge of fandom to make it real. Fair warning: the communities she links to are real and some of them are interesting enough to drag you away from the story for days.
fleshflutter’s spn_j2_bigbang: The Incestuous Courtship of the Antichrist’s Bride
“Sam is trying to become the Antichrist in order to save the world. He has a small army of angels and demons, he has an adoring cult, he has a work of prophecy by Jack Kerouac, and he has Dean. Things are going pretty well until he accidentally signs Dean up as his Beloved Consort, a role that requires sex with the Antichrist on an altar. And that's when things stop going pretty well. Also, the soundtrack to the Apocalypse sucks.”
Humour, snark, and a really good relationship between the brothers provide the background to the very fine line Sam takes in this story. Just because he’s agreed to be the Antichrist doesn’t mean he’s going to be evil.

Jay Tryfanstone’s spn_j2_bigbang: Kant’s Dove
"In a dystopian paradise, angel Inquisitor Samuel and rogue human Dean are uneasy allies. Together, they could knock their world from its foundations, but both of them have secrets to keep. Features angel!Sam and hooker!Dean, drug use, profanity, blasphemy, and some damn fine maple pancakes.”
Angels, or some variation of them, rule Earth directly and their attitude towards the human race is about what you’d expect from Supernatural-style warriors of God. But are they really God’s creatures, or something else? This story features wonderful world building, great characterizations, a fast moving plot and some very hot m/m action.
scaramouche’s deancasbigbang: It’s Always the End of the World Somewhere
The status quo is this: Dean is the popular captain of the football team, and Castiel is the off-kilter nobody who doesn't so much as breathe the same air as Dean. Then senior year happens and the status quo is shot to smithereens.
This is a sweet, gentle romance with enough bite to make it real (discrimination and homophobia, anyone?). There’s also the joy of being the last one to go through the same school as your over-achieving siblings. Whether it’s good behaviour or bad, it can be a hard thing to live up to. Excellent voices help set this one apart from other high school au’s.

“Sometimes all you can do is walk away, even when everything within you tells you not to. Dean thinks it will be simple, but one phone call from Bobby leads to a case that just may get him caught - and the hunt for Dean Winchester is on."
Mere weeks after escaping from Hell, Dean is more fragile than Sam realizes because Dean has always worked hard to hide it. Until, in that one moment, Dean can't deny it anymore, can't be 'the big brother', the strong hunter, and everything falls apart. This goes beyond angst into boxes of Kleenex.
glorious_spoon’s spn_j2_bigbang: We Drank a Thousand Times
“They meet in a bar fight in North Carolina when Dean is nineteen, broke, and desperate, then again when a hunt brings the Winchesters into town a few years later. Neither one of them ever puts a name to it but every once in a while, through the years, Dean finds his way back.”
The OC in this story is one of the most engaging characters I’ve ever encountered in fiction (commercial or fan work). He lives his life in a small Texas town, and every once in a while Dean comes back to just… be. Another one that had me bringing out the Kleenex.
On a lighter note, baylorsr’s spn_j2_bigbang piece: Apocalypse Z
Brian Williams was gravely saying, “Remember, once a person has been bitten, they must be shot in the head before they die and reanimate.” Of all the ways he’d imagined the world ending, this one had never entered Sam’s mind. It’s the zombie apocalypse, and Sam, Dean and Castiel are just trying to get to Bobby’s in one piece. And not undead.
This is the perfect Supernatural zombie story. It even features a fight at a Wal-Mart megastore. But don’t just stop at the story. The author also links to information and resources that will help you survive a zombie apocalypse.(I’ve always been a fan of the chainsaw but my son is right: you do have to get very close to use it.)
calamity_crow’s spn_j2_bigbang: This Ain’t No Thinkin’ Thang
“Two cowboys and a red truck.”
Okay, so the author’s summary is a little sparse, but it’s hard to fully describe the awesomeness of this story. Jensen comes from rodeo royalty so there was never any doubt what he would do with his life. One problem: he’s autistic. He’s also the cowboy with the red truck, a truck rodeo hopeful Jared needs in order to transport him and his horse from competition to competition. But Jared has a small problem too: he’s deaf. The level of understanding and acceptance between the two main characters is… Well, it’s what a relationship should be but very rarely is.
[ETA: Unfortunately, calamity_crow deleted her fics and her account. She has asked that her work not be distributed within the SPN fandom... or probably any fandom. It's a shame, because her stuff deserves to be read.]
Britomart_is’ spn_j2_bigbang: Dictionary for a Dead Language
“Under mysterious circumstances bitterly disputed by the historians, Sam Winchester said yes to Lucifer. Three years later, Lucifer is gone and the familiar landscape that the Winchesters once traversed is a burnt-out ruin of its former self — not to mention the damage done to Lucifer's vessel. Trapped in a grotesque parody of domestic bliss with a brother he no longer recognizes, a shell-shocked Dean has no reason to believe that happy endings exist for men like the Winchesters.”
This story takes the post-Apocalyptic curtain.fic and spatters it with dark colours. They’re not evil and they’re not heroes. They’re just surviving day after day, like everyone else. And like everyone else, they have their good days and their bad.
aramuin’s spn_j2_bigbangs: Queen’s Guard and Queen’s Guard II: Knight’s Gambit (as well as Queen’s Guard: Interdiction written for the kradam_bigbang)
"The fifth season of Supernatural, CW's paranormal drama, is scheduled for a return to our screens in autumn. Show creator Eric Kripke is reported to be "thrilled" with the news that show stars, Jared Padalecki and Jensen Ackles, have confirmed they'll be returning as brothers Dean and Sam Winchester. CW sources confirm that shooting is due to start soon with the first episode due to air on September 20th, 2012."
Unknown for millennia, some humans turn into dragons when the Earth is threatened, which is just what happened when aliens invaded. It’s not just the dragons, either. Some humans, often linked with specific dragons, will have powers of their own: teleportation, telekinesis, clairvoyance, etc. All three stories take place in a world where we’re trying to pick ourselves back up and rebuild, and hitting some bumps along the way. Way better dragon stories than Pern.
poetartist’s spn_gen_bigbang: The Art of Pulling Pie from Thin Air
“It's been four years since he disappeared from Stanford and Sam is wandering. Oh, he knows who he is, no amnesia involved (anymore), but he's not fully human (he's sure) and with that whole "if you walk out that door, don't you come back" still hanging between him and his family, Sam doesn't think they'll view his new demi-god status any different than college (except there might be more guns involved).”
With a light, lyrical touch, we’re introduced to a world where Sam kind of died. Well, he did die, but as usual for the Winchesters, something with a lot more power offers him a deal. So he heads back to the world to, you know, fight evil, and be a little demi-god in training. And then he runs into his brother in a bar.
glasslogic’s spn_j2_bigbang: Fortress and timestamp
“Seven years ago Dean Winchester paid his due to the Crossroads Demon and fell into Hell. Grief almost killed Sam, a demon blood addiction came closer, but he rid himself of demonic attachments and spent years building himself a prison where no demon can set foot, determined to take himself out of the apocalyptic game that had crushed his family. […] now Dean is back. Angry, powerful, and demonic; he has a plan to wreck vengeance on those who destroyed his life.”
Yes, Dean comes back as a demon, but he’s not working for Hell or Lucifer or any of those Apocalyptic-desiring nutjobs. No, he’s got a larger task and he needs Sam’s help to do it. Too bad Sam’s got an aversion to trusting anything—any one—demonic. This story takes the Christian ideas of Heaven and Hell, angels and demons, and turns them on their sides.
And finally a non-bigbang piece that deserves to be read.
From the spnkink_meme: A Farmer and His Cow.
This story goes so far beyond filling a kink prompt, it deserves to be a bigbang. It’s an engrossing look at how insidious objectification can be when it's done ‘for the greater good'. It’s effect on individuals and society at large. Many stories are described as thought-provoking; this one actually deserves the description. It's a convoluted and lengthy story that I stayed up way, way too late reading several nights in a row.
The world wants Ambrosia, a live-saving, youth preserving drug, so they look the other way at how it's made, which is by letting young male children be sold or seized to ‘farms’. There, safely away from public view, these children are forced to ingest Nectar, which alters their genetic structure and gives them animalistic traits. Their ejaculate is the Ambrosia that everyone craves. Jensen was sold to cover his parents’ debts. He was eight. Jared is the farmer who buys him, and abuses him, and convinces himself that he's a good guy because he treats his 'cows' so much better than other farmers.

Although I haven’t been as active in the FFVII fandom, I do have a couple favourites I’d like to recommend:
jaded_grin’s Genesis Award winning Dog Will Hunt
“Rufus ShinRa finds himself oddly drawn to his Turk, Reno. This is a dark fic that explores several issues for both men and isn't at all a pretty, happy story--but it ends well, I can promise that, and there' s loads of good smut!”
There’s so much more than smut here. There’s real people being forced to confront prejudices they didn’t even realize they had, and a slow, hard, painful crawl to (maybe) a happy, healthy relationship.
Also by jaded_grin (although on her ff.net account as purefoysgirl), is her Eromenos verse.
The chronologically first but (unfinished) last written, “Eromenos” explains how Sephiroth became fascinated by the little, blond, mountain boy. It deals with matters pre-Crisis Core to the showdown at the Nibelheim reactor. You don’t need to have read this one to read the others.
“Understanding” deals with the clones’ escape from the Northern Crater and how events developed and solidified their characters. It’s pre-Advent Children.
“The Beginning of the End” is Advent Children but with porn, and all sorts of back story character development that’s so involved and engrossing that you can almost see it taking place just off-screen. It’s also where my OTP of Reno/Yazoo was born.
“SINS” builds on the relationship between Cloud and Kadaj by first breaking it down.
What if Aeris found unexpected help before Zack broke out?
An AU/AR telling of how Zack & Cloud escaped the lab and made their way back to Midgar, with wings and claws and limit breaks and evil scientists. A good ride!

Pre-Nibelheim AU. Hojo's [sloppy] filling in [of] a form has certain... unexpected consequences for Sephiroth.
…such as Midgar Child Protection Services coming to take Sephiroth away and then he gets put up for adoption. 2010 Genesis Award Runner-Up: Best Comedy
